I spent a month in Bali last year, and the food really was a mixed bag. Some of the dishes were out of this world! But not all … I was lucky enough to meet a woman who had opened a restaurant, and she was determined to serve the real deal She was a five star chef, but she went into the villages and temples and learned as much as she could. At her restaurant, she tries to stay as loyal as possible to traditional Balinese recipes and cooking methods. The lunch I had was spectacular!!!.

The copious use of pork in Bali given that it’s primarily Hindu is quite surprising. Hadn’t thought about that, and am also wondering why that is. Now off to poke around and do some research!
